Crispy Chicken Biscuits香脆薄片鸡仔饼

I have always wanna try to make this biscuits.This is a very aromatic biscuit, the aroma comprises fragrance of garlic, five spice powder and fermented bean curd.

Apparently, this biscuit is a famous hand gift from the town of Kampar in Perak. Beside, there is another different type of biscuits, it's thicker, most of the ingredients are the same but have added pork belly meat as the fillings. I'll try to make it next time.😉

Preparation of this biscuit is not difficult. The outcome of this recipe is very satisfactory, it is extremely crispy and aromatic. Most of the recipe in the net is the same may be with slight alterations and I'm satisfied with this recipe.


我一直想尝试做这鸡仔饼。这饼干非常芳香,香气中含有大蒜香,五香粉和豆腐乳。

这鸡仔饼是原自于霹雳州Kampar镇的着名手工礼品。 此外,还有另一种不同类型的鸡仔饼,它比较厚,大部分成分都相同,只是添加了五花肉作为馅料。 我下次也会尝试去做。😉

制备这饼干并不困难。 这个配方的结果非常令人满意,它非常香脆。 网中的大多数配方都是相同的,可能会略有更改,我对这个配方很满意,只是稍微更改一些成分。

我存放进两个小罐,大儿子和女儿各人有一罐鸡仔饼。😄

Ingredients : 
(A)
300g plain flour 
1 tsp baking powder 
1/2 tsp salt 
1/2 tsp pepper 
1/2 tsp five-spice powder
1 tbsp minced garlic 
85g fine candied winter melon
100g white sesame seed( if you hv black sesame seed, can add in too, 40g each)
1/4 tsp ammonia ( I omit this)

(B)
1 egg (grade A)
1 tbsp maltose 
2 fermented bean curd
1 tbsp fermented bean curd sauce
100ml cooking oil
85g castor sugar 

Method:

1) Mix well ingredients (B) .
2) Mix ingredients(A) into (1), fold it into a dough.
3) Let the dough rest for about 20 minutes. Then roll a small ball, place it on a baking sheet and then press it into thin slice.
4) Preheated the oven,  bake it at 140 degrees for about 16 minutes or till golden brown. (I used fan bake mode)

材料:(原食谱)
A)300g普通面粉、1小匙发粉、90g糖粉、1/2小匙盐、1/2小匙 胡椒粉、1/2小匙五香粉、1汤匙蒜茸、100g冬瓜糖(打碎)、40g黑芝麻、40g白芝麻、1/4小匙臭粉

B)1粒A蛋、1汤匙麦芽糖、2块南乳、1汤匙南乳汁、100ml食油

做法:

1)把材料(B)一起搅拌均匀备用。
2)把材料(A)然后拌入(1)材料。搅拌成均匀的面团。
3)让面团休息约20分钟。然后取出小团,搓圆,放在铺了烤纸的烤盘上,然后压成薄片。
4)烤箱预热后,把烤盘送入烤箱里,以140度烘烤16分钟左右或金黄色即可取出。(我用风扇模式烘烤)
