Chocolate Sponge Cake 巧克力海绵蛋糕

I made this Chocolate Sponge Cake for my dearest boy for celebrating his 14th birthday. My boy said the strawberry cubes at the side of the cake reminded him of the climbing wall building....hahaha...😄😜

My boy likes to eat Western food, so I decided to make this sumptuous meal for celebrating his birthday.

Ingredients:

5 large egg whites (160 grams)
1 teaspoon Vinegar
120 grams Fine Sugar
4 Large Egg Yolks (72 grams)
90 grams Plain Flour
30 grams cacao powder
1/2 teaspoon Salt
20 grams oil (20 ml)
30 grams milk (30 ml)
1 teaspoon vanilla essence

Method:
Pan Size: 18 cm

Oven Temperature: 150°C for 35 minutes, 170°C for 3 minutes

1. Beat egg whites with vinegar till foamy, add in gradually the sugar and beat it till soft peak foam.
2. Add in egg yolks and use hand mixer mix well.
3. Add in flour & salt in two batches, mix well.
4. Add in oil, milk & vanilla essence and mix well. Then use spatular mix well.
5. Pour batter into pan. Use a table knife to cut through the batter to release any big bubbles.
6. Tab the pan on the table a few times before put in the oven.
7. Bake in the bottom third rack at 150°C for 35 minutes.
8. After 35 minutes, increase the temperature to170°C and continue baking for 3 minutes.
