Easy Vanilla Cupcakes(4)香草口味杯子蛋糕

My boy asked me to bake some Vanilla Cupcakes for class party to end their year end classes 2017. These Vanilla Cupcakes are so lovely and appealing with the buttercream frosting. I'm sure everyone of them would like it. 😉






Ingredients:
- 1/2 Cup of Unsalted Butter (softened) (100g)
- 3/4 Cup of Sugar (143g)
- 2 Eggs
- 2 Teaspoons of Vanilla Extract (10ml)
- 1 1/2 Cups of All Purpose Flour (210g)
- 1 Teaspoon of Baking Powder (5g)
- 1/4 Teaspoon of Salt (1.5g)
- 2/3 Cup of Milk (160ml)

Directions:

1. Cream butter and sugar until fluffy. Add the two eggs and beat until just combined. Stir in the vanilla. On a separate bowl, whisk together the dry ingredients. Add dry ingredients to creamed mixture and mix well. Stir in the milk until it is well incorporated into the batter.
2. Line a cupcake pan with baking cups. Fill each cup with batter 2/3 full.
3. Bake at 350 °F for about 20-24 minutes or until an inserted toothpick comes out clean.
Let cool completely before adding frosting.

*This recipe makes 1 dozen cupcakes.

Swiss Meringue Butter Cream

Ingredients

1 cup salted butter (room temperature)
1/2cup egg white
1 cup granulated sugar
1 tsp vanilla extract

1.Beat the egg white and sugar
2. Put the bowl with egg mixture over a pot with simmering water. Heat the egg mixture to completely melt the sugar and when the temperature reaches 140 -160 F degree, remove from the pot.
3. Use an electric hand mixer to beat the egg mixture until the stiff peak is formed. It takes around 10 minutes.
4. Slowly add the butter.
5.  When the frosting is light and fluffy, add in vanilla extract. Tint the frosting with desired food color if needed.
