Custard cream buns

 This custard cream buns are so yummy! We love it!! 💗

 This is custard cream.

Ingredient:
3 Egg Yolks
60g Sugar 20g Flour
250g Milk
15g Unsalted Butter

Method:


  1. Combine the egg yolks and sugar in a bowl and whisk until light in color. Add in the flour and tmix to combine.
  2. Warm the milk and butter in a saucepan over medium heat until the milk just begins to boil.
  3. Slowly pour a little into egg mixture,  using a spatula or a whisk, mix well the pastry cream. Strain if you wish for a smoother cream, this will get rid of the flour lumps and cooked egg york in the mixture. Bring the mixture to a boil. Let boil for about 1 minute, stirring constantly. The mixture will be thick.
  4. Remove from heat. Place into a bowl and cover directly with plastic wrap to stop a skin from forming on the cream. Chill and use within a few days.


Ingredients (About10-12 buns, each about 50g)

250g bread flour
8g powdered milk
40g sugar
3g salt
10g instant dry yeast
55~60g 1 egg
100g water
35g butter

Method:
1. mix all ingredients with egg and water (except butter)
2. when dough is made, add butter and mix until the dough is smooth
3. covered so that dough won't get dry. Ferment first until the size is double or triple bigger
4. separate into 50g doughs. then go for 2nd fermentation for 10~15min.
5. roll the dough so that it is long and wide
6. put cream in the dough, put some water on the end, fold in half. I put about 30g of cream in each dough.
7. covered dough so that it won't get dry. Then 3rd fermentation until it is double the size.
8. bake in preheated oven at 180c for 10~12min
9. brush some milk onto baked bread when the surface is still hot.
