Matcha Mille Crepe Cake抹茶千层蛋糕 

Ingredients:

For the crepes:
50 g butter, melted
650 ml milk
4 large eggs
240 g all-purpose flour, sifted
2Tbsp (10g) green tea (matcha) powder, sifted
1 tsp salt
90g white sugar

For the filling:
600 ml heavy cream
sugar 80g(optional)
A few drops of Vanilla extract

Preparation:
1. To make crepes. In a large mixing bowl, mix the eggs, flour, green tea powder, sugar and salt. Pour the milk and butter. Mix well. 

2. Heat 8" - 9" skillet over medium-high. Melt the butter in the pan and pour about 3 tbsp (40 – 45 ml) of the batter into the pan. Swirl the pan several times so that the batter spreads evenly on the surface. Fry for about 1 – 1.5 minutes until the edge of the crepe turns dry and golden brown, and no longer sticks to the pan. Flip the crepe and fry for about 45 – 60 seconds until it is cooked. Transfer onto a rack and leave to cool. Repeat until the batter is finished. Let the crepes cool down. Makes about 15 - 17 crepes.

3. Trim off the edges of the crepes by running a knife around the edge of an upside-down bowl so that all the crepes are even in size. (Optional)

4. To make filling. Whip the cold whipping cream with sugar on high speed. 

5. To assemble. Lay a crepe on a cake plate and cover with a thin layer of filling. Place another crepe directly on top and repeat layers until crepes are gone. Refrigerate cake until firm, at least 1 hour and up to 4 hours. Only dust the matcha powder and powdered sugar just before serving to prevent the powder from absorbing the moisture and melt your beautiful design.
