Super Moist Carrot Cake

Carrot cake is one of my favourite cake.....My personal preference is to have a carrot cake that is soft and moist. Orange flavor goes very well with it. This carrot cake that is full of flavor and will melt in your mouth.This is truly the best carrot cake that I’ve ever had. 😘❤❤❤





Carrot cake recipe

Ingredients:
250g all purpose flour (1 3/4cups-pressed)
350g finely grated carrot(2 cups -pressed)
200g sugar(1 cup)
4 eggs
1&1/2 tsp baking powder
1tsp baking soda
1/2 tsp salt
180ml oil(3/4 cup)
1 tbsp orange juice 
3 tbsp orange zest
2 tbsp Cranberries 
1 tsp  cinnamon powder


Cream Cheese Frosting:
1 1/2 cups powdered sugar, sifted lightly to remove any lumps
250g cream cheese, at room temperature
60g unsalted butter, at room temperature
1 tablespoon vanilla extract

Method:

1. Whisk together sugar, eggs, orange zest and oil until thick.

2. Then add in flour,baking powder,baking soda,salt and cinnamon and mix gently

3. Lastly, add in the grated carrots,cranberries and orange juice and mix in until well combined.

4. Grease and line a 20cm x 6cm (8" x 2") tin. 

5. Pour mixture into tins and place in the oven at 350F (180C) for 45- 60 minutes (10mins more or less or until a skewer comes out clean).

6. Leave to cool in tins for 10mins then turn onto a cooling rack.

To prepare the frosting: 
~In a large bowl, using an electric mixer on medium-high speed cream cheese and butter until smooth. Then slowly add in the powdered sugar and vanilla until it is smooth and creamy (do not over beat). Chill until needed and decorate as desire.


Notes:
1.Do not over mix the batter
2.keep an eye when you baking if you see the top is burning before time place an aluminum foil on top as soon as you get a nice brown color.
3. baking time could be more or less 10- 15 mins. Insert a toothpick in the middle of the cake to check, if it comes out clean it's done. If batter sticks on it, bake a few more minutes.
