Orange Cake

My oranges have been sitting in the fridge for a very long period..... since nobody is going to eat them, I decided to use it to make this yummy orange cake. 


As you can see the cake was a bit over baked & the side of the cake wasn't in a good shape because I forgot to grease the side of the cake pan...... In order for the cake to test done, I had to bake it for the full 60 minutes, which ultimately produced a dry cake. However, the taste is wonderful, and the cake is soft and fluffy. We like it. ^^


Ingredients:
4 whole eggs
1 1/2 cup caster sugar
1/2 cup oil
2 cups flour
3 tbp baking powder
1/2 tsp salt (optional)
1/2 cup fresh orange juice
2 tbp orange zest
1 tsp vanilla (optional)

DIRECTIONS:
1. Preheat your oven to 350 ° F (180 ° C). Grease and flour a pan. If using fresh oranges, zest and juice them.

2. With an electric mixer or by hand, beat together the eggs and sugar until thick. Gradually beat in the oil.

3. Stir in the flour, baking powder and salt, and then the orange juice. Beat until smooth, and then mix in the zest and vanilla.

4. Pour the batter into your prepared pan, and bake for about 40 minutes, or until the cake tests done.( I baked it longer time about 60 minutes).

5. Allow the cake to cool in the pan for 7 to 10 minutes, then turn out onto a rack to finish cooling.
