Blueberry Vanilla Muffins 

Ingredients:
1 + 2/3 cups cake flour (not self-rising)
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 stick unsalted butter, softened
2/3 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
3/4 cup sour cream

Method:
  1. Preheat oven to 375 degrees F. Line a 12-cup muffin pan with baking cups.
  2. Sift together flour, baking soda, baking powder and salt.
  3. Beat the butter and sugar together on high speed until pale and fluffy about 3 minutes. Beat in eggs 1 at a time then vanilla.
  4. Scrape down sides of the bowl. On low speed beat in flour in 3 additions alternating with sour cream starting and ending with flour. 
  5. Fill baking cups 2/3 full. Top with blueberry cream.
  6. Bake about 20 minutes until toothpick comes out clean with a few moist crumbs - not raw batter - attached. Cool completely on wire racks before frosting.
