I like coconut...... coconut drinks, shredded coconuts, coconut milk... I find it very flavorful and nutritious.
These coconut cookies are very crispy and irresistible. Served along with a cup of black coffee makes a tasteful breakfast and tea break.

Ingredients ;
150 g butter
11 tbsp sugar
2 eggs
1 tsp vanilla extract
6 tbsp wheat bran ( I used 6 tbsp Nestum & 2 tbsp Instant oats)
2 tsp baking powder
1/4 tsp baking soda
2 cups dried coconut flakes
10 tbsp flour
Directions
1. Preheat oven to 375 degrees F (180 degrees C). Line 2 baking sheets with parchment paper.
2. In a large bowl, cream together butter and sugar until well mixed.
3. Beat in the eggs and vanilla extract.
4. Stir dry ingredients together: flour, Nestum, oats, baking soda, baking powder and coconut flakes. Gradually add into butter mixture.
5. Create small balls and place on prepared baking sheets with distance between them.
6. Bake 18-20 minutes in the preheated oven or until golden brown.
7. Remove from sheet to a cooling rack. Cool completely.
