Pumpkin Quiche

At first, I wanted to make button mushroom quiche, but they are spoiled. Hmmm..... then I saw  tomato in the fridge, so I changed my mind to bake tomato quiche..... OMG! The tomato also spoiled!!!! Lesson learned, do not keep the fresh food too long in the fridge.

Well, luckily, I have half pumpkin in the fridge! Yeah!! So, pumpkin quiche is a good choice for our breakfast ! Hmmm....this is my version of savoury pumpkin quiche. Addition of roasted pumpkin brings a delicious sweetness to the quiche that contrasts the crispy bacon so wonderfully. I also added ground Parmesan cheese into the egg mixture. As the quiche baked it filled the kitchen with the gorgeous appetite inducing aromas of bacon, cheese and eggs. 😉

Savoury Pumpkin Quiche :

Pie Crust :
300g plain flour
1/3 tsp salt
150g butter, very cold
100ml cold water

Method :
Cut butter into flour and add in salt.Use a fork gradually blend the butter until the mixture resembles fine breadcrumbs. Then stir in water and mix well into a dough. Wrap up dough in cling film wrap and chill in the refrigerator for 30 minutes before rolling out. Cut the rolled out pastry to fit the pie pan. Prick with fork and bake blind at 180c for 10-15 minutes. Leave to cool.

Fillings :
1/2    pumpkin (peeled and chopped into small cubes)
2        Big onion(Chopped)
5slices     Bacon( fried & crumbled into small pieces)
200g    Minced chicken/pork(optional)
125g  Cheddar Cheese (grated)
25g    Butter
3     Eggs(slightly beaten)
200ml   milk
1 tsp    Mix spices 
1 tsp    Ground black pepper, pinch of salt & pepper

For the fillings:
1.Place pumpkin cutes onto a tray & season with salt & pepper,  drizzle with olive oil and bake for 10 minutes or until cooked and a little golden.

2.Heat butter, add in onion and cook till soft. Add in minced meat , fried till cook. Add in  spices & seasoning and cook for 3 minutes then dish up to cool.

3. Mix the milk mixtures with eggs, grated Parmesan cheese,seasoning & spices.

4. Pour the fillings onto the pastry , put roasted pumpkin on top of fried meat & onion, then pour in the eggs mixtures onto it. Sprinkle  crumbled bacon pieces & grated Cheddar cheese on top and a dash of pepper.

5. Bake in the oven for 35 -40 minutes at 180c.
