Mandarin Orange Marmalade 橘子果酱

This was the first time I made marmalade. Because there are still many oranges in the fridge, no one wants to eat them after the Chinese New Year has passed ...... Well, I decided to learn how to make mandarin orange marmalade.

Mandarin Orange Marmalade

Ingredients:
3 small bowls of  Mandarin oranges
1/2 small bowl of  orange peels( cut into strip)
1  small bowl of water
1  small bowl of  sugar
1 stick of cinnamon stick

Instructions:

  1. Peel the Mandarin oranges .Remove as much of the white pith from the peel as possible.
  2. Chop the peeled oranges into small pieces(Make sure to remove any seeds).
  3. Place the peels in a small pan with the water and sugar and bring it to a boil.
  4. Reduce heat,  simmer on low heat for about 20 minutes.
  5. Add orange segments and cinnamon stick to the pot and bring it back to a boil.
  6. Boil rapidly, uncovered about 10 minutes.Reduce heat to a simmer again and allow to cook for 20 minutes, or until thick and "jammy"; stir often to keep from sticking.
  7. Remove it from the heat.
  8. Ladle it into a jar and let cool completely before keep in the fridge.
