Carrot Cake Brazilian style



        I made this carrot cake which is don't need a mixer to do the job, and the outcome was quite impressed.....and beautiful golden orange colour.


 Tadaa.....ready packing for my dearest friends. Hope they like the mini carrot cake. ^^


Carrot Cake Brazilian style


3 large carrots, peeled and thinly sliced (about 350g)
3 eggs (medium)
240ml corn oil
200g sugar 
1/4tsp salt
250g all purpose flour
1tsp baking powder

butter (to grease baking pan)

Method
1. Preheat oven to 175c.
2. Place the sliced carrots, eggs and oil into the bender, then process untill the carrots are finely chopped. Add in sugar and salt, mix till combine.
3. Add flour and baking powder, mix until well blended.
4. Pour batter into greased baking pan, and bake for 35-40mins or until inserted skewer come out clean.
5. Remove cake from pan and let cool !
