Almond Cookies (杏仁酥)


These almond cookies are one of my all time favourites. I baked these cookies because it was very easy to make, all I had to do was to roll them into balls, brushed with egg wash and baked! What a breeze!

Almond Cookies杏仁酥

Ingredients:
120 g ground almonds
180 g  plain flour
120 g caster sugar
1/4 tsp vanilla essence(optional)
1/4 tsp salt
1 tsp baking powder
1 tsp bicarbonate of soda
120 ml. cornoil or sunflower oil
1 egg yolk for glazing

Method:
(1) Combine all the ingredients together in a mixing bowl and mix into a dough.
(2) Roll small dough of about 7 gm. each and arrange on baking tray.
(3) Brush with egg yolks and bake at 170C for about 15 to 20 mins. or till lightly browned.
