Carrot Cake胡萝卜蛋糕

This carrot cake is really moist and delicious. I added some walnuts in the cake to give it more flavour.

I love carrot cake with cream cheese frosting!   It's quick and easy, you can make it as a dessert not just for a special day but anytime. 




Carrot Cake胡萝卜蛋糕

Ingredients:
1 1/2 cups granulated sugar 
1 1/2 cups vegetable oil 
4 eggs 
2 cups all-purpose flour 
1 1/2 teaspoons ground cinnamon 
1 teaspoon baking soda 
1 teaspoon vanilla extract 
1/2 teaspoon salt 
1/4 teaspoon ground nutmeg 
3 medium carrots, shredded (2 cups) 
1/2 cup coarsely chopped walnuts (optional) 

Instructions:
1. Heat oven to 350ºF (180ºC). Grease and flour bottom and sides of  pan, 8 x 8 inches. 

2. Mix sugar, oil and eggs in large bowl until blended;  Stir in remaining ingredients except carrots and nuts, mix well. Stir in carrots and nuts. Pour into pan. 

3. Bake 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Frost with Cream Cheese Frosting. 

Cream Cheese Frosting: 
250g cream cheese, softened 
50g   butter(softend)
1 teaspoon vanilla 
1/2cup powdered sugar 

Beat cream cheese, butter and vanilla in medium bowl with electric mixer on low speed until smooth. Gradually beat in powdered sugar,  until smooth and spreadable.
