I made this non bake blueberry cheesecake for my dear buddies~~Hwee Hwa & Mee Chu for celebrating their birthday. The cake is indeed refreshing & yummy! A simple decoration to make this cake looks beautiful & lovely.^^
The cake doesn't taste too cheesy and the flavour is just right & not too sweet. Everyone made a compliment on this cake after taste it. Blessings.....♥
Biscuit Base:
110 g Digestive Biscuits - crushed with roller
45 g melted butter
Mix them together and press into an 7" spring form tin. Chill it.
Cream Cheese Filling:
250g cream cheese
50g Icing sugar
1/2 lemon, squeeze out juice
200ml whipped cream- whipped till medium peak
1 tbsp gelatine powder + 70 g water
250g blueberry pie filling
Method:
1. Mix gelatin with hot water and set aside to allow the gelatin grains to swell in the bowl over a pot of simmering hot water . Stir with a spoon and once the gelatin melts.
2. Beat cream cheese with icing sugar till well combined.
3. Add in gelatine mixture and mix well.
4. Add in blueberry pie filling and mix well.
5. Fold in whipped cream.
6. Put into the fridge to let it set for 2 to 3 hours or overnight.
