Lemon Custard Cookie( 柠檬吉士饼)

These Lemon Custard Cookie are pretty nice with just a hint of lemon flavour. The tasture just like German cookies. 😊




Ingredients:
250g marjerin
100g icing sugar, sifted
200g potato flour
100g plain flour
50g  custard powdered
2 tbp lemon juices
1tbp  lemon zest

Method
1. In a mixing bowl, beat butter and icing sugar till light and fluffy. 

2. Add in lemon juices and mix well.

3. Sift in potato flour, cakeflour and custard powdered with a spatula to form a soft dough. 

4. Roll dough into small balls, arrange on lined baking pan and press lightly with a fork.

5. Bake in preheated oven at 160C for 15-20mins.

Note: If the mixture appears too soft and wet to shape, leave the dough to chill in the fridge for about 10-15mins.
