Chocolate layered Cake with Orange Cream Cheese

My dearest youngest son requested chocolate banana cake with strawberries for decoration. 😉 So I made this chocolate banana cake with orange cream cheese filling for him.




Hopefully the cake is yummy with the orange flavoured cream cheese filling & frosting.



Well, the birthday boy likes it!! Yeah!! 😍And I can tell you that the cake is yummy! 😘

Chocolate layered Cake with Orange Cream Cheese

Steam Moist Chocolate Cake


Ingredients:
145g     corn/sunflower oil
180g     castor sugar
200ml   fresh/UHT milk
2           eggs,  lightly beaten
110g     cake flour (you may use plain flour)
45g       good quality unsweetened cocoa powder
1/2 tsp  baking powder
1/2 tsp  baking soda

Method
  1. Heat up the steamer.
  2. Lined and greased a 8  inch baking pan.
  3. Combine castor sugar, milk, oil and eggs in a large mixing bowl. Stir till well mix.
  4. Sift the flour, cocoa powder, baking powder and baking soda into a large mixing bowl.
  5. Pour the eggs mixture over the flour and stir till well mix (cake batter should be runny).
  6. Pour the batter into prepared pan, cover the top of the pan losely with a piece of aluminuim foil.
  7. Steam over medium heat for 40 - 45 mins.
  8. Cool the cake in pan before turning out for further decoration.
Orange cream cheese filling:

290gm cream cheese, at room temperature
40gm sugar
rind from 1 orange
1.5 tbsp of gelatine powder
80ml orange juice
170ml whipping cream

1. Dissolve the gelatine powder over orange juice and let sit for 5 minutes. Stir and melt over simmering water ( double boil ) till gelatine fully dissolves. Remove from heat.


2. Cream the cream cheese with sugar till smooth and mix in the orange rind .


3. When the gelatine mixture has slightly cooled down, pour the gelatine mixture into the cream cheese mixture and mix until well blended. 


3. Beat the whipping cream till medium stiff peak and fold over the cream cheese gelatine mixture. Spread the filling onto a piece of sponge cake and cover it with another sponge cake. Spread the remaining cream cheese all over the cake. Freeze the cake till the filling set.
