Yam Rice芋头饭

今天心血来潮,想煮芋头饭吃。卖相还可以吧!忍不住,提早吃晚餐了!嘻嘻。。。


香喷喷的芋头饭煮好了!好吃!






























Almost every Chinese family also know how to cook this Yam rice. My late mom used to cook this in the wok. I like to cook this one dish meal, quick, easy and tasty ! 

Yam Rice芋头饭

Ingredients:
450g Pork belly (cut into bite size, marinate with salt,sugar,oyster sauce,soy sauce,sesame oil and starch))
50g dried shrimp (soaked)
450g Taro/ Yam (cut into cubes) 
100g shallots (slice)
5 cloves garlic (chopped)
3 cups  Fragrant rice (washed and drained)
water

Seasoning
1tbsp light soy sauce
1tbsp  Oyster sauce
1tbsp dark soy sauce
A dash of white pepper powder
Salt and chicken stock(optional) to taste

Method:
1. Heat some oil in a wok, saute shallot until crispy and golden brown, set aside.

2. Heat some oil in a wok, fried the taro cubes until slight golden brown, set aside.

3. Use the remaining oil, add dried shrimp, stir fry till fragrant. 

4. Add chopped garlic, stir fry till fragrant.

5. Add in pork belly, sauté till slightly brown.

6. Add in rice and toss well.

7.Add in the seasonings.

8. Add in the fried yam cubes.

9. Add in the fried shallots.

10. Add in water(just cover over the rice) and cook the rice.

11. Remove the rice and transfer to a rice cooker and continue cooking.

12. Garnish cooked Taro/Yam rice with fried shallots,spring onion, chopped parsley, red chillies and serve hot.

材料:
450克   五花肉(切成一口大小,腌盐,糖,蚝油,酱油,香油和粉)
50克     虾米(浸软)
450克   芋头(切成方块)
100克   葱头(切片)
5  瓣     大蒜(切碎)
3杯       香米(洗净,沥干水分)
适量的水

调料:
1汤匙淡酱油
1汤匙蚝油
1汤匙老抽
白胡椒粉
盐和 鸡精

做法:
1.  烧热油镬,爆香葱头直到酥脆金黄色,备用。

2.  烧热油镬,炸芋头块,直到轻微的金黄色,备用。

3.  用剩下的油,放入虾米,炒至香。

4.  加入切碎的大蒜,炒至香。

5.  加入五花肉,炒至浅棕色。

6.  加入香米和翻炒好。

7.  加入调味料。

8.  加入炸好的芋头块。

9.  加入炸好的葱。

10.加入水(刚好覆盖米)煮。

11.将米取出,转移到电饭煲,继续煮熟。

12 .放些炸葱头,青葱,香菜,红辣椒,趁热食用。
