香蕉椰丝纸杯蛋糕(Banana Coconut cupcakes)

Yes, I like to bake banana cake or cupcake....if I have the   banana in the house.^^ Don't you  agree with me that these  banana coconut cupcakes are good for breakfast, afternoon  snack and supper! ^^        

Well,  the shredded coconut in this cake is a perfect match .....it makes the cake  more flavour and chewy.. A perfect bite for tea time! 

Look at the texture of the cupcakes, it's really moist & soft. Love it!! ^^

Ingredients:

125g butter
100g caster sugar
150g cake flour
2 eggs (large)
1/2tsp baking powder
1/4tsp baking soda
100g  plain yogurt
1/2cup  shredded coconut
150g mashed banana

Method:
  1.  Beat butter and sugar until fluffy.
  2.  Add in the eggs one at a time, mix well
  3.  Add in yogurt and mix well.
  4.  Sift in flour, baking soda and baking powder, combine well.
  5.  Last add in mashed banana, combine well.
  6.  Scoop the batter into the muffin paper liners to about 3/4 full. 
  7.  Bake in pre-heated oven at 180C for 25mins.
