Yes, I like to bake banana cake or cupcake....if I have the banana in the house.^^ Don't you agree with me that these banana coconut cupcakes are good for breakfast, afternoon snack and supper! ^^
Well, the shredded coconut in this cake is a perfect match .....it makes the cake more flavour and chewy.. A perfect bite for tea time!
Look at the texture of the cupcakes, it's really moist & soft. Love it!! ^^
Ingredients:
125g butter
100g caster sugar
150g cake flour
2 eggs (large)
1/2tsp baking powder
1/4tsp baking soda
100g plain yogurt
1/2cup shredded coconut
150g mashed banana
Method:
- Beat butter and sugar until fluffy.
- Add in the eggs one at a time, mix well
- Add in yogurt and mix well.
- Sift in flour, baking soda and baking powder, combine well.
- Last add in mashed banana, combine well.
- Scoop the batter into the muffin paper liners to about 3/4 full.
- Bake in pre-heated oven at 180C for 25mins.
