Craving for crispy stuff?
I baked these crispy walnut cookies with peanut oil. Cookies turned out crispier than the ones with butter.^^
Recipe adapted from the one above:
Ingredients:
(A)
200g peanut oil
pinch of salt
1 lightly beaten egg
(B)
450g premix flour ( Hup Toh Soh Mix)
(C)
50g Walnut bits
(D)
1 beaten egg for egg wash(added a pinch of salt)
Method:
1. Toast walnuts in oven at 160C for 6-8 minutes. Cut into tiny pieces.
2. Mix (A) in a mixing bowl.
3. Add in flour mixture into oil mixture and form a dough.
4. Divide dough 10g pieces, shape them into flat round disc. Apply egg wash. Put them on a lined baking tray 2cm apart to allow room for expansion.
5. Bake at 180C for 15 - 20 minutes or till golden brown.
