Lap Cheong Chicken Pot Rice


Hubby requested this dish for dinner....well, it was a wise choice!! Every one loved it!!  YEAH!!^^

This is a very simple and easy to cook meal.....

Ingredients:

  • Rice  3 cups
  • Boneless chicken thighs  3 whole leg( Chopped into small pieces.Marinated with 1tbsp oyster sauce, soy sauce, 1 tbp black sauce, 1 tbp "Huo diao jiu"(rice wine),1 tsp sugar, 1 tsp salt, 1 tsp chicken stock, some pepper, starch, ginger juice)
  • Lap cheong  2 long sticks ( if those normal size are 4 sticks) It depends on you want to put more or less😉
  • Ginger  4 cm( 2cm sliced & 2cm pound it to get the juice fr marinate the chicken thigh)
  • Spring onion  chopped
  • Fresh parsley chopped


Method:

1. Pre-cook the rice in the rice cooker.

2. Heat some oil, fry the ginger slices, add in the chopped chicken thigh and fry till a bit brownie colour, then dish out and put on top the half cook rice in the rice cooker together with the lap cheong.

3. Add 1 tbp thick black sauce 1 tbp sweet soy sauce and 1 tbp oyster sauce, covered and continue cook the rice.

4. Once the rice has cooked.....lieve it simmer for 5 minutes then stir evently the rice and chicken. Make sure the rice has coated with the sauce.
