Cinnamon Honey Cupcakes with Pineapple filling肉桂蜂蜜蛋糕与凤梨馅

I baked  these  pineapple tarts just to fulfill my eldest son's craving. He likes to eat pineapple tarts... not only him... me too! Hehehe... Since I still have some leftover pineapple paste. I decided  to make these simple muffins to finish the leftover pineapple paste. Auola!!! Look at that cute little muffins... there's a little surprise in each of these delicious cuppies... and soft & yummy! Love the cinnamon fragrance when the muffins is baking in the oven.

These aren't my everyday muffins. They're indulgent! The texture is tender, moist, much softer and lighter than a slice of pound cake. I guess they taste just like cupcakes, minus the frosting.^^

Warm, freshly baked, homemade muffins are not only a nice treat for breakfast but also great for a casual tea time at home. These muffins are full flavour, certainly not a surprise as they are studded with all the honey, cinnamon and pineapple jam . 



Cinnamon Honey Cupcakes with Pineapple filling
肉桂蜂蜜蛋糕与凤梨馅

Ingredients

60ml canola or corn oil
170ml milk
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
40g  honey
240g plain flour 
1 teaspoon baking powder
1 teaspoon ground cinnamon
100g granulated sugar
1/4 teaspoon salt
pineapple paste rolled in a ball size

Method:

1.Sieve flour, baking powder and ground cinnamon into another  

mixing bowl. Add sugar, salt and stir to combine.


2.In a mixing bowl, whisk together milk, oil, honey, sugar and 

vanilla extract, until just combined.


3.Slowly add in the beaten egg & mix well.


4.With a rubber spatula, fold the flour into the egg mixture and stir 

until the ingredients are just combined. 


5.Spoon batter into paper muffin cups, put in a ball of pineapple 

paste and fill it with batter to about 3/4 full.


6.Bake in preheated oven at 180C for about  25mins or until a 

toothpick inserted in the center of a muffin comes out clean.Transfer 

to a wire rack and let cool completely.


材料:
菜油60克
全蛋一只
牛奶170克
白糖100克
蜂蜜40克
肉桂粉 1小匙
面粉240克
泡打粉1小匙
苏打粉1/2小匙
盐1/4小匙
黄梨馅 搓成圆形

做法:

1.把面粉,泡打粉,苏打粉和盐混合后过筛备用。

2.在搅拌容器中放入所有的湿料:菜油,牛奶,白糖,蜂蜜,然
后用手搅拌器打匀至白糖融化约一分钟。

3. 慢慢加入蛋液并拌均匀。

4.把过筛后的粉类加到湿料中,搅拌均匀。

5.玛芬模子中抹油防沾或者直接放纸模杯,把面糊舀到模子里,
加入一个黄梨馅,再把面糊舀到模子里大约八分满。

6.送入已预热好的烤箱180摄氏度,烤25分钟或者用牙签试验不
沾即可出炉。把玛芬从模子中取出放在烤架上,使其完全冷却。
