印尼椰子鸡(Indonesian coconut chicken)



Today I would like to share this Indonesian coconut chicken with Basmati rice. Glad that my family like it.^^ You must try this!!

Ingredients:

Chicken     1 whole
Lemongrass  6-9 stalks
Shallots  6 
Garlics    4 cloves
Galangal  2 inches
Ginger     1 inches
Fresh Chilies 5 stalks(optional)
Kaffir lime leaves 5 leaves(shredded)~optional
Curry leaves  3 stalks(optional)
Coconut milk  2 coconuts
Shredded coconut  1 coconut(I used3/4) Prefried it first and keep aside.
Turmeric powder 2 tbp ( I used curry powder 3 tbp)
Asam water  200g or 3 tbp tamarind paste mixed with 200g water


Method:
1. Lemongrass bottom part(keep the stalks & pounded a bit), galangal, ginger, shallots , fresh chilies and garlics blended or pounded.

2. Heat the oil, fry the pounded ingredients till fragrance, add in curry powder, curry leaves, kaffir leaves and fry for about 4 minutes.

3. Add in chicken pieces,and fry in slow flame, add in asam water and cook for 10 minutes,  add in coconut milk and cook for 20 minutes.Add in some salt to taste. Lastly, add in fried shredded coconut and continue cook for 3 minutes.

4. Ready to serve.
