Lemon Poppy Seed Cupcakes

While waiting for the Matcha cake is baking in the oven, I quickly made these cupcakes too!😊


These cupcakes are dry, perhaps, baking them too long...😦

Lemon Poppy Seed Cupcakes

Ingredients :

70g corn oil
150g sugar
1 lemon, finely grate the rind
1/2 lemon juice
2 large eggs
250g cake flour (will reduce to 200g next time when i bake it again)
1tsp of  baking powder
1/2cup milk
10g blue poppy seeds ( will increase to 20g next time )

Lemon Sugar glaze:
4tbsp icing sugar
2 tsp hot water

Mehod:
1. Sift cake flour and baking powder in a bowl.
2. Beat egg with the sugar until pale and fluffy.
3. Add in  corn oil and lemon rind, mixing well.
4. Fold in the flour and milk, combine well. Last add in poppy seeds, stir well.
5. Pour the mixture into cake tin (I added 1 chocolate ball in the middle of the cupcakes)
6. Bake in pre-heated oven at 180C for 15-20mins.
7. While baking the cupcakes, start to prepare the sugar glaze.
8. Mix sugar and water till sugar dissolved, set aside.
9. When cupcakes done, remove cupcakes from the oven and pour over the sugar glaze over the hot cupcakes.
