Try these apple poppy seed muffins for a delicious treat for breakfast or afternoon tea. Serve warm with a cup of your favourite drink.
Ingredients :
1 1/2 cups all-purpose flour
1 teaspoons baking powder
1/2 teaspoon ground cinnamon
2tbp poppy seeds
1/2 cup firmly packed brown sugar
1/2 cup corn oil
1 cup milk
1/4 cup yogurt
2 eggs
1 peeled apple and diced
Method :
1. Heat oven to 180°C. In a large bowl, combine flour, baking powder and cinnamon; mix well. Stir in rolled oats and brown sugar.
2. In a medium bowl, beat oil, milk, yogurt and eggs until well blended. Add to dry ingredients; mix just until dry ingredients are moistened. Stir in apples and poppy seeds. Fill muffin cups 3/4 full.
3. Bake muffins for 15 to 20 minutes or until light golden brown.
