Two lovely cheese cakes ~~Toblerone cheesecake & Blueberry cheesecake


I baked these two cheese cakes to  welcome my friends come to my house on the  CNY 12th day. Beside of these cheese cakes, i  have also catered some food .

I was disappointed  that some of my friends couldn't come for this gathering.....hopefully, they can make it next time . ^ ^


Here is the recipe for Toblerone cheesecake :


Ingredients :
1 cup plain chocolate biscuits , crushed ( I used digestive biscuits)
1/3 cup unsalted butter, melted 
500 grams  cream cheese, softened 
1/2 cup sugar 
1/2 cup thickened cream, or heavy cream 
200g Toblerone chocolate (milk or dark chocolate), melted 

Garnish: 
Extra Toblerone chocolate (milk or dark chocolate), grated 
Confectioners' sugar

Instructions:
1. Melt the 1/3 cup of butter. 

2. Crush chocolate biscuits into crumbs. 

3. Mix together the chocolate biscuit crumbs and melted butter. Press mixture into bottom of lightly greased 23cm (9-inch) springform pan. Place in refrigerator to chill. 

4. Beat the cream cheese with an electric mixer for 2 minutes or until smooth. 

5. Place the chocolate in a small saucepan or in the top of a double boiler on low heat (water in bottom of double boiler should be at a slow simmer) and melt the 200g (approximately 8 ounces) of toblerone, stirring constantly. 

6. Add the sugar, melted toblerone, and heavy cream to cream cheese and continue beating until thoroughly combined and very smooth. 

7. Remove cheesecake base from refrigerator and spoon mixture into base. Smooth top of cake with a metal spatula. Refrigerate (in pan) for at least 4 hours or overnight. 

8. Before seving, remove cheesecake from refrigerator and release sides of springform pan. Place cheesecake on serving platter and garnish with the extra grated Toblerone chocolate and dust top with confectioners' sugar (optional). 


Recipe for Blueberry Cheese cake :

Biscuit Base:
100 g Digestive Biscuits - crushed 
60 g melted butter
Mix all the above ingredients and press onto the cake tin base.


Cream cheese filling :
250 g Cream cheese
65 g whipping cream
60 g sugar ( half portion to egg yolk & egg white )
3 egg yolks
3 egg whites
1/2 tsp vannila flavour
1  tbp lemon juice

 Method :

1. Cream the cheese & half portion of sugar togather,slowly add in the whipping cream togather with vanilla essence & lemon juice. Beat the mixture till light & fluffy. Add in the egg yolks one at a time and beat well until all combine.

2. Whisk egg whites & balance sugar till peak form.Use spatula to fold egg whites to cheese mixture.

3. Pour cheese mixture into prepared cake tin.

4. Steam bake at 160c  for one hour & leave to cool.

5. Spread 250g blueberry pie filling onto the cheese cake & chill the cheese cake before serve.
