Mini Red Velvet Cupcakes

I made some cute Red Velvet Cupcakes for the kids. These cupcakes as delicious as it's cute😘 The cupcake is soft & moist with a light flavour of chocolate too. 😉


Mini Red Velvet Cupcakes

Ingredients :
½ cup   Sour cream
½ tsp    Vanilla extract 
65g       Unsalted butter
150g     salt
1          Egg
1 tsp   Red food colouring
1tbsp  Dutch-processed unsweetened cocoa powder
115g   Cake flour
½ tsp  Baking soda

Milk butter cream:
1 ½ tbsp   All purpose flour 
½ cup       Milk
115g         Unsalted butter
100g        Sugar
1 tsp        Vanilla extract
Pinch of  salt

Method :
  1. Preheat oven to 180°C. 
  2. Line muffin pans with baking cups.
  3. Sift the cake flour & baking soda and set aside.
  4. Mix together the cocoa powder, red food colouring and 1-2 tbsp of sour cream together to form a paste
  5. Cream the butter, salt and sugar until light and creamy, add the egg, vanilla extract and beat to combine.
  6. Add the cocoa paste and beat to combine. 
  7.  Alternate adding the flour and the rest of the sour cream in three batch.
  8. Let stand for 15 minutes.
  9. Divide the batter among the cups.
  10. Bake for 15 minutes or until the cupcakes spring back when gently touched.
  11. Let the cupcakes cool completely on a wire rack.

Make the milk butter cream:
  1. Sift the flour.
  2. Pour milk and all purpose flour in small saucepan, bring to boil over low heat, stir until thicken. Take the pan out of the heat and let it cool.
  3. Beat butter and sugar together until light, put the milk mixture into the bowl, beat to combine.
  4. Frost the cooled cupcakes with the butter cream.
