Matcha Macaroons


Yeah....Matcha Macaroons with red bean fillings. These little cookies will be the best way to brighten up the lazy afternoon. 


I think  it must be my oven's temperature was too hot and cause the macaroons 's surface cracked......




 Ingredients
50g  ground almonds
80g   icing sugar
50g  egg whites
25g  caster sugar
5g    matcha powder

Filling
125g red bean paste
25g butter, soften to room temperature
1 Tbsp milk
*Mix all together until smooth 
  

Method
1. Sift ground almonds,matcha powder & icing sugar in a bowl.
2. Whisk egg whites with mixer until bubbly. Gradually beat in caster sugar & whisk to make glossy & firm meringue.
3. Using a spatula, fold almond mixture into the meringue 1/3 at a time. When all the dry ingredients are thoroughly incorporated, continue to  fold the mixture until it forms a thick batter.
4. Pipe onto baking paper. Tap the baking pan firmly on work surface & let it stand at room temperature until shells are dry. ( I forgot to do this step,that's why I can't get the right shape of the macaroon)
5. Preheat oven to 150C & bake for 16 minutes depending on the size. Remove from oven and cool on trays. Slide a knife under each macaroon to release from paper.
6. Sandwich macaroons with filling.
