Loh Mai Kai 糯米鸡



My family likes to eat "Loh Mai Kai". We used to buy them from the Dim Sum Shop for next day's breakfast. Since they are so costly,I decided to make them. Well, the result was great !!

Loh Mai Kai糯米鸡

Ingredients:
材料A:

  • Glutinous Rice  800g 糯米-800 g(Wash  & soak for 4 hours,rinsed & set aside)(洗净,浸水4小时沥干备用)
  • Thick Black Sauce 2 tbp  黑酱油-2 汤匙
  • Soy sauce 3tbp  酱油- 3 汤匙
  • Oyster sauce 3tbp 蚝油- 3 汤匙
  • Sesame oil 1tbp 麻油- 1 汤匙
  • Salt 1tsp  盐-1 茶匙

~Marinate the rice for 2 hour or over night 
将全部材料A腌2小时,

材料B

  • Whole chicken thigh  4  (chopped into pieces)  鸡全腿-4个 (斩件)
  • Mushroom 12 (socked)  香菇- 12 朵 (浸软)
  • Chinese chicken sausages(lup cheong) 2 (sliced)  腊肠-2 条 (切片)
  • Ginger Juice 2 tbp  姜汁- 2 汤匙
  • Oyster sauce 2tbp  蚝油-2 汤匙
  • Soy sauce 2tbp   酱油- 2 汤匙
  • Thick black sauce 2tbp  黑酱油-2 汤匙
  • Sesame oil 1tbp  麻油-1 汤匙
  • Sugar 11/2tbp   糖- 11/2汤匙
  • Rice wine(Hua diao jiu) 2 tbp   花雕酒-2 汤匙
  • Corn starh 1tbp  (Add some water to  thicken it )  粟米粉- 1 汤匙(加少许水勾芡)

~Mix all the seasoning except thicken  corn starch & marinate them with the chicken for 2 hours or over night 
将全部材料B搅拌均匀,除了粟米粉例外,腌至少2小时。

材料C
Hot water 1 pot   烧水大概一煲

Mrthod 做法:
1)Heat some oil & fry 1tsp chopped garlic,add in the chicken & fry it till cooked,add in thicken corn starch then dish out.    
烧热1汤匙油爆香1瓣蒜茸,将腌好的材料B,拌炒至鸡熟,以粟粉水勾芡,捞起备用。

2) Heat some oil & fry 1 tsp chopped garlic ,add in marinated glutinous rice & fry it till half cooked then dish out. 
烧热1汤匙油爆香1瓣蒜茸,将腌好的材料A,拌炒至米半熟,离火。

3) Prepared 12 small bowls ,put in 2 pieces of chicken,1 mushroom, a few pieces of Chinese sausages,then add in some cooked glutinous rice & press it evenly.
在每个已涂油的小碗,放入1片鸡块,1片香菇,几片腊肠,然后平衡的铺上炒好的糯米压扁。

4) Pour in some hot water until water level is slightly higher than the rice.
把热水,平分到各4小碗里,只要水盖过糯米就可以了。

5) Steamed it for 30 minutes or till cooked
大火蒸30分钟或熟即可。
