I made this mooncake for my good friend ~~~Cindy when I visited her today. She made Sarawak Laksa for us to eat. She specially invited us to her house to taste her laksa. 😘
Ingredients :
Water dough :
160g Plain flour
25g Icing sugar
50g Shortening
75ml Water
Oil dough :
10g Plain flour
70g Shortening
Filling (any paste you like ) :
300g red bean paste
Glazing:
1 egg ( lightly beaten)
Some black sesame seeds
Method :
1. Divide filling into 30g each portion & roll it into round balls. Set it aside.
2. (water dough) : Combine flour,icing sugar & shortening.Add in the water & knead into a soft dough. Divide into 10 portion (30g each) of round balls..
3. (Oil dough) : Mix well the flour & shortening.Divide into 10 portion (18g each) of round balls.
4. Flatten the water dough & wrap in the oil dough .Shape it into a round ball. Use a roller & shape the dough in long rectangular shape then roll up like a swiss roll.Repeat the same process one more time & rest the dough for 10 minutes.
5. Flatten the dough & wrap in the filling then shape it into a round ball.Flatten it into a round shape & cut the edges into 5 flower petals.
6. Egg wash the doughs then top with some sesame seeds. Bake at 180'C preheated oven for 20 minutes or until golden brown.
