Have not been baking for quite a while.......(^^).After all....I was too lazy to post up the recent baked recipes...(^^) hehehe...Sorry ya !!!!
These cupcakes are delicious.... the yogurt, oats ,prune and berries are great for your health too (^^).
You can serve it as a breakfast as a good start of the day !!!
Ingredients:
150g Cake flour
20g Quick oats
1½ tsp Baking powder
a pinch of salt
110g Golden caster sugar
2 Eggs
110g Yogurt
60ml Vegetable oil
150g Prune (cut into small pieces)
Some blueberry cream
Method :
Preheat the oven to 200°C.
1) Sift flour and baking powder into medium bowl ,stir in oats, salt and sugar.
2) Mix eggs, yogurt and oil together, then pour into the flour mixture, follow with prune, mix until just combine (don't over-mix).
3) Spoon batter into the prepared tins, spoon a tsp of blueberry cream into it,then add in another spoon batter on it. Bake for 20-25 minutes. Stand in tins for 5 minutes; transfer them onto wire rack to cool completely.
Enjoy baking !!
