Barley with snow fungus dessert

My eldest son asked for "thong sui" recently.Since i have all these ingredients in hand,i just dumped everything into the pot and boiled for one hour. It is refreshing to have a dessert during a hot weather for the whole family.


Ingredients:
Snow fungus,(雪耳) washed & soaked (discard the middle yellow part)
Dried winter melons
Red dates, rinsed

Barley,rinsed
Dried longans,rinsed
Rock Sugar 
3 liters Water

Methods:
1.Bring water to boil.
2. Add in all the ingredients except snow fungus & rock sugar.
3. Boil in low fire for 1 hour.
4. After 30 mins,add in  rock sugar & snow fungus and continue boiling for another 30mins.
5. Served chilled or hot .
