Korean Glass Noodle with Mixed Vegetables(Japchae) "韓式拌雜菜粉絲"


I made this dish couple days ago. All my family members like to eat  this yummy & healthy noodles.I invited my MIL to come for lunch too.She liked it. :))

The foundation of the dish is the mixture of the noodles , soy sauce , garlic and sesame oil.You can mix and match the vegetables or meat to your liking.This required a lot of work and preparation.

Korean Glass Noodle with Mixed Vegetables(Japchae) "韓式拌雜菜粉絲"

Ingredients:
500g Korean glass noodles
150g chicken breast meat,sliced(merinaded with soy sauce,sesame oil,pepper,cornflour)
5 shitake mushrooms (rehydrated if dried) ,sliced
1 carrot , thinly sliced
3 stalk spring onion,cut in 2" long
1 bowl cabbages,thinly sliced 
1 red chili(seeded), thinly sliced
2 eggs(separate yolk & egg white)
2 green cucumbers(seeded),thinly sliced 
2 tbp  sesame seed,tosted

Sauce:
3 tbp soy sauce
11/2 tbp sesame oil
1 tbp minced garlic
1 tbp sugar
1 tsp pepper
1 tbp  sesame seed,tosted

Method:

1) Boil noodles in boiling water till cooked,drained

2)Quick cook the sauce and add in the noodles ,mix well

3)Pan fried the beaten eggs separately like crepe,slice into strips

4)Heat 1 tbp oil and stir fry chicken meat till just cooked,dish out

5)Heat 1 tbp oil and stir fry mushrooms & some chopped garlic & salt+ sesame seed for 2 mins,dish out

6)Used the remaining oil stir fry cabbages,add in some water & salt + sesame seed to simmer & dish out

7)Heat 1tbp oil and stir fry carrot,add in a pinch of salt + sesame seed & cook for 2 mins ,dish out

8) Heat 1 tsp oil and stir fry cucumbers & spring onions,add in a pinch of  salt + sesame seed & cook for 2 mins,dish out

9)Lastly,mix the noodles with all the cooked vegetables & meats.You may add in more soy sauce & sesame oil for stronger taste. Serve .
