Chocolate Rice Walnut Cake“核桃巧克力蛋糕”

I like walnuts ! I like to use walnuts in cakes or cookies.This walnut cake is rich in butter & chocolate. If more walnuts were added it will taste better.This cake goes well with a cup of coffee or tea. Would you like a slice of  this walnut cake ??? :))

Ingredients :
(A)
6 Egg yolks
50g Brown sugar
20g castor sugar

(B)
225g Hard butter
80g Brown sugar
85g Low fat milk/ cream
1 tsp vanilla essence
200g Plain flour
1/2 tsp Baking powder
A pinch of salt
100g Walnut, toasted & chopped ( i used 50g which i only have in my fridge)
100g Chocolate rice/chip ( i used 140g which i have in the fridge)

(C)
4 egg whites
50g Sugar
Few drops of vinegar

Method:
Preheat oven to 160 degree C
Grease and line a 10inch round baking tin

1. Whisk Ingredients (A) at maximum speed for about 3 mins until thick & creamy, leave aside. (Egg yolk mixture)
2. Cream butter and sugar at medium speed for 15 mins until fluffy.
3. Add in egg yolk mixture, low fat milk, vanilla essence & salt.
4. Add in the dry ingredients (sifted plain flour, baking podwer, walnut & choc rice) at slow speed. Leave aside.
5. Whisk Ingredients (C) at maximum speed till stiff.
6. Turn to slow speed, combine meringue and butter mixture together & fold well.
7. Pour into the baking tin and bake for 45-50mins.
