I love those Westerner's creamy soup to bits. Broccoli and potato are a good blend in this recipe. It is high in fibre & low saturated fat.We ate it with Cheese Garlic Bread.Yummy !!
Ingredients:
1 Kg broccoli, cut into florets
5 medium-sized potatoes, peeled & chopped
1 tbsp Olive oil
1 largeYellowonion, chopped ( i used red onion)
2 cloves garlic, crushed
2 cups vegetable stock (I used plain water)
2 cups water
1/2 cup thicken cream
Salt & pepper to taste
Methods:
1. Heat oil in a large saucepan over medium-high heat. Add onion and garlic.
2. Cook, stirring for 3 mins or until soft.
3. Add broccoli, potato, stock and 2 cups water. Cover.
4. Bring to boil. Reduce heat to low. Simmer, stirring for 10-15 mins or until potato is tender. Remove from heat.
5. Process in a food processor until smooth. Return to pan.
6.Add in thicken cream & cook for 5 mins or until heated through.
7. Season with salt and pepper. Serve.
