Yam rice (Taro rice)

  I made this yam rice for lunch yesterday.👇


Mom's recipe :
- 2 cup uncooked rice, wash and soak for 15 min
- yam (taro), skin removed and cubed 
- 3 tbsp dried shrimps , soaked in water for 15 minutes, drained 
- 5 shallots (slice thinly)
- 100g or more char siew or pork belly(marinate with soy sauce), cut to small pieces
 1/2 tsp salt
- dash of ground white pepper
- 2 tbsp oil 

Seasonings
- 1 tbsp light soy sauce
- 1 1/2 tsp dark soy sauce

Directions 
1. Heat a wok. Stir fry yam cubes on medium high heat till just about cooked. Set aside. 
2. Using the remaining oil in the wok,fry shallots until golden brown. Dish up and set aside.
3. Using the remaining oil in the wok, stir fry dried shrimps on medium low heat till fragrant (about 2-3 minutes).Add in char siew or pork belly and stir-fry for a while.
3. Return the cooked yam & fried shallots to the wok. Add rice, ground white pepper,salt & seasonings. Stir fry for 1-2 minutes till all the ingredients are well mixed.
4. Add water to cook rice until 1cm above the surface of the rice.Stir well and cover the lid. Stir occasionally & simmer for 5 mins.
5. . Transfer the cook rice in rice cooker & continue cooking. DONE !
