Orange prune yogurt cake




I made this cake last night. The cake was unsuccessful because the center sank a bit ... it must be insufficient of baking time although I have it baked for one hour. 😓 So,  I cut out the center part  and  put it back into oven and baked it until cooked. This cake is very moist and soft, it taste yummy despite the wet center part.Well, I'll bake it again and add in other fruit to try !!

Orange prune yogurt cake

Ingredients:

(A)
250g Butter (Cold)
180g Sugar
5 Egg yolks


(B) - mix together
2tbsp Orange rind
2tbsp Orange juice
150g plain or fruity flavor yogurt
100g Sour cream
100-120g pitted prunes (Sunsweet brand)


(C) - sieve
250g Plain flour
2tsp Baking powder


(D)
5 Egg whites
40g Sugar
1/4tsp Cream of tartar( i used 1 tsp of lemon juice)


Method:
Preheat oven at 160C
1. Cream butter & sugar till light & fluffy.
2. Add in egg yolks one at a time
3. Add in (B).
4. At min speed, add (C) and mix well, set aside.
5. Whisk egg white till foamy, then add in sugar & cream of tartar, continue to whisk till stiff.
6. Fold in half of the meringue into the butter mixture and mix well. Then pour it into the balance meringue & continue to fold well.
7. Pour into a 9" round  pan & bottom line w/paper and bake for 1 hour till cooked.
