Blueberry Yogurt Cupcakes with Raisins

I like to make simple & easy cupcakes which i don't  need to used a electric mixer to blend ......yet i still can get to eat a soft & moist cupcakes !You can eat this without frosting or paired with the cream cheese frosting.


Ingredients :

200ml blueberry yogurt
100g raisins
110g corn oil
285g castor sugar
200g plain flour
1 tsp baking powder
2 eggs
1 tsp vanilla essence

Method
1. In a small bowl, mix yogurt and raisins together and let it stand for 30 mins (room temperature)
2. In a medium bowl, mix corn oil and sugar with a wooden spatula.
3. Add eggs, 1 at a time to mix.
4. Add vanilla essence to mix.
5. Stir in raisin + blueberry yogurt mixture.
6. Fold in sifted flour/baking powder till well blended.
7. Spoon batter onto paper cups.
8. Baked in preheated oven 180C for 20 mins till golden brown.
9. Served warm.
